Thai Tofu Salad with Peanut Satay Sauce

Ingredients

Thai Tofu Salad

(serves 2)

  • 400g Firm Tofu
  • 1 tbsp tamari
  • 1 tbsp sesame oil
  • Thai salad mix (Coles)
  • Fresh coriander
  • Crushed peanuts

Peanut Satay Dressing

(serves 2)

  • 2 tbsp peanut butter
  • 1 tbsp fresh lime juice
  • 1 tbsp rice vinegar
  • 3 tsp tamari
  • 2 tsp honey
  • 2 tsp sesame oil
  • ½ tsp crushed garlic
  • ½ tsp crushed ginger
  • Chilli flakes
  • 2 scoops unflavoured collagen powder

Method

  1. Preheat oven to 180˚C.
  2. Prepare tofu: Drain the tofu well, pat dry with paper towel and slice the block into small rectangles. Add to a bowl and coat with tamari and sesame oil. Stir gently to coat the pieces.
  3. Line a baking tray with parchment paper. Spread the tofu cubes onto lined baking tray and bake in oven for 25-30 minutes or until golden brown.
  4. Make dressing: In a small bowl, whisk together peanut butter, rice vinegar, tamari sauce, honey, lime juice, ginger, sesame oil, garlic, collagen powder and chilli flakes. Season to taste with salt and pepper. If the dressing is too thick, add hot water, 1 teaspoon at a time.
  5. Assemble salad: add thai salad mix as a base and top with cooked tofu, thai peanut dressing, coriander and crushed peanuts.
