Chicken Rice Paper Rolls

Fresh, healthy and Delicious. These delectable Chicken Rice Paper Rolls are a perfect fusion of freshness and nutrition! With thinly sliced avocado, chicken breast, vibrant vegetables, and a touch of toasted sesame seeds, each roll promises a symphony of textures and tastes. What's more, this recipe takes a healthy twist by excluding noodles, making it lower in carbs. Pair it with our best-selling Strawberry Watermelon Collagen, it's yummy and packed with lots of goodness!

Ingredients (Makes 12):

12 rice paper sheets

3 tbsp toasted sesame seeds

1 avocado, thinly sliced

1 large chicken breast, thinly sliced

2 Lebanese cucumbers, cut into thin strips

2 medium carrots, shredded

2 cups shredded cabbage

Dipping sauce of choice

Per serving: 2 scoops Strawberry Watermelon Collagen + water

 

Method:

  1. Place one rice paper in cold water and let it rest on a wet chopping board for about 20 seconds—wait until the sheet is pliable but not super floppy.
  2. Sprinkle the centre with toasted sesame seeds, top with 3 slices of avocado.
  3. Top with 2 pieces of chicken followed by the cucumber, carrot, and cabbage. Leave about 1 inch of open rice paper around the edges.
  4. Fold the lower edge up over the fillings, rolling upward just until the filling is compactly enclosed. Fold over the short sides like you would to make a burrito. Lastly, roll it up. Repeat.
  5. Dissolve 2 scoops of Strawberry Watermelon Collagen in a large glass of water and stir.
Serve the rice paper rolls with the collagen drink and dipping sauce of choice. Enjoy!
