Chicken Rice Paper Rolls

Fresh, healthy and Delicious. These delectable Chicken Rice Paper Rolls are a perfect fusion of freshness and nutrition! With thinly sliced avocado, chicken breast, vibrant vegetables, and a touch of toasted sesame seeds, each roll promises a symphony of textures and tastes. What's more, this recipe takes a healthy twist by excluding noodles, making it lower in carbs. Ingredients (Makes 12):
12 rice paper sheets
3 tbsp toasted sesame seeds
1 avocado, thinly sliced
1 large chicken breast, thinly sliced
2 Lebanese cucumbers, cut into thin strips
2 medium carrots, shredded
2 cups shredded cabbage
Dipping sauce of choice
Per serving: 2 scoops Strawberry Watermelon Collagen + water
Method:
- Place one rice paper in cold water and let it rest on a wet chopping board for about 20 seconds—wait until the sheet is pliable but not super floppy.
- Sprinkle the centre with toasted sesame seeds, top with 3 slices of avocado.
- Top with 2 pieces of chicken followed by the cucumber, carrot, and cabbage. Leave about 1 inch of open rice paper around the edges.
- Fold the lower edge up over the fillings, rolling upward just until the filling is compactly enclosed. Fold over the short sides like you would to make a burrito. Lastly, roll it up. Repeat.
- Dissolve 2 scoops of Strawberry Watermelon Collagen in a large glass of water and stir.
- Serve the rice paper rolls with the collagen drink and dipping sauce of choice. Enjoy!
