Ingredients:
2 large eggs
1 cup mashed bananas
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 scoops Unflavoured Collagen
2 cups almond flour
1/4 cup tapioca flour
2 tsp baking powder
Cinnamon filling:
1/2 cup almond flour
1/4 cup coconut sugar or monk fruit sweetener
2 tablespoons melted coconut oil
2 teaspoon cinnamon
Method:
- Preheat the oven to 160C and line a loaf tin with baking paper.
- In a large bowl, whisk together eggs, bananas, cinnamon, collagen and vanilla until smooth
- Mix in the almond flour, tapioca flour and baking powder until smooth and well combined.
- In a separate bowl, combine the almond flour, sugar, coconut oil, and cinnamon until crumbly.
- Pour ½ the batter into the pan. Sprinkle over half of the crumble mixture then pour remaining batter on top. Sprinkle with remaining crumble mixture
- Bake for 35 minutes until you can insert a toothpick in the middle and it comes out clean. Enjoy!
