Garlicky Beef & Caesar-Style Salad with Roast Veggies & Walnuts

A wholesome, low-carb twist on the classic Caesar salad. Tender garlic-herb chicken is paired with roasted root vegetables and a crisp salad, all brought together with a creamy Caesar-style dressing and crunchy walnuts.
Ingredients
- Chicken tenderloins
- Garlic & herb seasoning
- Carrot
- Potato
- Red onion
- Tomato
- Mixed salad leaves
- Caesar dressing
- Mayonnaise
- Grated Parmesan cheese
- Walnuts
- Olive oil
- White wine vinegar
- Salt & pepper
Method

Preheat oven to 240°C (220°C fan-forced). Cut carrot and potato into small chunks; slice red onion into wedges.

Place vegetables on a lined baking tray. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast for 20–25 minutes until tender.

In a small bowl, combine Caesar dressing, mayonnaise, and most of the grated Parmesan cheese (reserve some for garnish). Season to taste.

In a medium bowl, combine garlic & herb seasoning with a drizzle of olive oil. Add chicken tenderloins and toss to coat. Heat a drizzle of olive oil in a large frying pan over medium-high heat. Cook chicken for 5–6 minutes on each side, until browned and cooked through.

Slice tomato into wedges. In a medium bowl, combine a drizzle of white wine vinegar and olive oil. Add tomato and mixed salad leaves, season, and toss to coat.

Divide roasted vegetables, salad, and chicken between plates. Drizzle with the Caesar-style dressing. Sprinkle with walnuts and reserved Parmesan cheese to serve.
