Mapo Tofu

Hearty, flavorful, and packed with protein, this Spicy Pork & Tofu Stir-Fry is a comforting take on a Chinese-inspired classic. With tender tofu cubes simmered in a bold, savory sauce and paired with fragrant jasmine rice, it’s a simple yet satisfying dish that delivers on taste and nutrition. Perfect for a quick weeknight dinner, and easily customizable with your preferred spice level.
Ingredients (Makes 2 Serves)
- 1 tbsp vegetable oil (peanut or canola oil works too)
- 150g ground pork
- 2 garlic clove, minced
- 2 tsp ginger, minced
- 1/4 cup scallions/shallots, finely chopped
- 4 tsp chili bean sauce (or sriracha for a milder option)
- 400g firm tofu, cut into cubes
Sauce:
- 1 cup water
- 1 tbsp cornstarch (mixed with a splash of water for slurry)
- 1/2 tsp chicken or vegetable stock powder
- 1 tbsp soy sauce
- 1/2 tbsp sugar
- 1 tbsp hoisin sauce
- 2 tbsp Chinese cooking wine
- 1 tsp sesame oil
Serve with: 75g cooked jasmine rice (per serve)
Method:
- Heat oil in a pan or wok over medium-high heat.
- Add garlic and ginger, stir-frying for about 10 seconds until fragrant.
- Add scallions/shallots and cook for another 30 seconds.
- Add the ground meat and cook until browned, breaking it up as it cooks.
- Stir in the chili bean sauce and cook for 30 seconds.
- In a small bowl, mix the cornstarch with a splash of water, then add the remaining sauce ingredients and stir well.
- Gently fold in the tofu and pour in the prepared sauce.
- Stir carefully and simmer for 1–2 minutes until the sauce thickens.
- Serve hot with steamed rice.
