Stuffed Turkey Breast with Cranberry

This Stuffed Turkey Breast with Cranberry is a lighter, festive take on a Thanksgiving favourite. Filled with creamy brie and sweet cranberry sauce, then baked until golden, it delivers all the holiday flavour in a balanced, high-protein meal. Paired with roasted potatoes and steamed green beans, it’s a comforting, wholesome dish perfect for a seasonal dinner without the heaviness of a traditional roast.

Ingredients (Serves 2)

  • 300g turkey breasts
  • 50g brie cheese
  • 50g cranberry sauce
  • 1 Egg and 50g panko bread crumbs and 1 tsp mixed herbs (to coat the stuffed turkey)
  • 200g Potatoes, roasted
  • 100g Green beans, steamed 

Method:

  1. Preheat oven to 180°C / 350°F.

  2. Prepare the turkey: Slice a pocket into each turkey breast. Stuff with brie cheese and cranberry sauce.

  3. Coat the turkey: Beat the egg in a small bowl, then dip the stuffed turkey breasts in egg and coat with panko breadcrumbs.

  4. Cook the turkey: Heat a small splash of oil in an oven-safe pan over medium heat. Sear the stuffed turkey on all sides until golden, then transfer to the oven and bake for 15–20 minutes, or until cooked through.

  5. Prepare sides: While turkey cooks, roast or boil the potatoes until tender and steam the green beans.

  6. Serve: Slice the stuffed turkey and serve with potatoes and green beans. Optional: drizzle with extra cranberry sauce or sprinkle with fresh herbs.
