Chicken Mango Salsa Lettuce Wraps

Fresh, light, and packed with protein—these Chicken Mango Salsa Lettuce Wraps are the perfect balance of sweet, savory, and zesty! Juicy chicken meets a vibrant mango salsa, all wrapped in crisp lettuce for a deliciously nourishing meal. Paired with a refreshing glass of Grape Collagen, it’s the ultimate glow-boosting combo!
Ingredients (serves 3)
- 450g chicken breast or tenderloins
- Salt and pepper, to taste
- Olive oil spray, for cooking
Mango Salsa - 1 mango, diced
- 1 Lebanese cucumber, diced
- 1 red capsicum, diced
- 1 avocado, diced
- ½ small red onion, diced
- Juice of ½ lime
- Salt and pepper, to taste
To Serve - Cos or butter lettuce leaves
- 6 scoops Purple Grape Premium Collagen Peptides + 3 glasses water
Method
- Season the chicken with salt and pepper.
- Heat a skillet over medium heat, spray with olive oil, and cook for 4-5 minutes per side (or until fully cooked). Set aside, let rest, then dice into cubes.
- In a large bowl, combine all mango salsa ingredients and stir to mix well.
- Arrange lettuce leaves on a plate. Add 2-3 tablespoons of mango salsa to each, then top with diced chicken.
- Add 2 scoops of collagen to each glass of water and stir to dissolve.
