Chickpea Curry with Super Beauty Greens

    Bold, flavorful, and packed with plant-based goodness—this Chickpea Curry is a hearty, nourishing dish that’s perfect for any meal! Infused with warming spices like cumin, coriander, and turmeric, it’s a comforting bowl of goodness. Ingredients (Serves 4)
- 1 medium red chilli
 - 4 garlic cloves
 - 1 (2-inch) piece fresh ginger
 - 1 medium yellow onion
 - 6 tbsp oil (e.g., avocado or canola)
 - 2 tsp ground coriander
 - 2 tsp ground cumin
 - ½ tsp ground turmeric
 - 2 ¼ tins canned diced tomatoes
 - ¾ tsp salt
 - 2 400ml cans chickpeas, rinsed
 - 2 tsp garam masala
 - ¼ cup fresh coriander, for garnish
 - 1 serve of The Collagen Co. Super Beauty Greens
 
Method
- Blend Aromatics: In a food processor, pulse the chilli, garlic, and ginger until minced. Add the onion and pulse again until finely chopped.
 - Sauté Base: Heat oil in a large pan over medium-high heat. Cook the onion mixture, stirring occasionally, until softened (about 3-5 minutes). Add coriander, cumin, and turmeric, stirring for another 2 minutes.
 - Simmer Curry: Pulse the tomatoes in the food processor until finely chopped, then add them to the pan with salt. Lower the heat and let it simmer for 4 minutes, stirring occasionally.
 - Add Chickpeas: Stir in chickpeas and garam masala. Cover and let simmer on low for another 5 minutes, stirring occasionally.
 - Serve: Garnish with fresh cilantro and enjoy!
