Chocolate Peppermint Cookies

Ingredients (Makes 12 cookies)

3/4 cup gluten free all-purpose flour

1 cup Chocolate Glow Shakes powder

1/3 cup granulated sweetener

1 tsp baking soda

1 large egg

1 tsp vanilla extract

1/2 tsp peppermint extract

1/2 cup melted coconut oil

1 cup sugar free chocolate chips

1/2 cup sugar free white chocolate chips

1 tsp coconut oil

2 candy canes, finely crushed

Method

  1. Preheat the oven to 180°C/160°C fan-forced and line a large baking tray with baking paper.
  2. In a large bowl, combine the flour, chocolate glow powder, sweetener, and baking soda.
  3. Add the egg, vanilla, peppermint, oil, and stir until a dough is formed. Add 1 teaspoon of cold water if needed.
  4. Add the chocolate chips and stir in with a mixing spoon, then chill in the freezer for 10 minutes while the oven finishes heating.
  5. Form the dough into small balls (2 tbsp each), place 2 inches apart on the tray, and bake for 10-12 minutes, or until cookies are set but still soft in the centre. Cool on a wire rack.
  6. Melt the white chocolate chips in a small bowl in the microwave on high in 30-second intervals, stirring in between until the chocolate is melted.
  7. Drizzle the white chocolate on half of each cookie, then sprinkle with crushed candy canes.
