Healthy Chicken Noodle Soup

Warm up with a nourishing bowl of Healthy Chicken Noodle Soup, a comforting dish packed with vibrant veggies, tender chicken, and the added benefits of unflavoured collagen. Perfect for a cozy meal, this recipe is not only delicious but also supports your well-being with each flavourful spoonful.

Serves 2

Ingredients:

  • 2 celery sticks, diced
  • 2 carrots, diced
  • 2 spring onions, diced
  • 2 cloves of garlic, minced
  • 1 tsp fresh grated ginger
  • 200g raw chicken breast, diced
  • 1/2 tsp ground turmeric
  • 1 litre vegetable stock
  • 1 tbsp soy sauce
  • 100g brown rice vermicelli noodles
  • Chilli flakes (to taste)
  • 2 scoops unflavoured collagen

Instructions:

  1. In a large pot over medium-high heat, spray with olive oil. Add the carrots, celery, spring onions, garlic, and ginger. Sauté until tender, about 4-5 minutes.
  2. Add the chicken and turmeric, and sauté for 1 minute more.
  3. Add the stock and soy sauce, then bring to a boil over high heat. Reduce to a simmer and let the chicken cook until tender, about 10 minutes.
  4. Remove the chicken, shred it with a fork, and set it aside.
  5. Stir in the noodles and add back the chicken, collagen, and chilli flakes. Cook for an additional minute, then serve into bowls.
