A high-protein twist on a take-away classic! This Pad See Ew is packed with tender chicken, chewy noodles, and crisp Chinese broccoli, all tossed in a rich, umami-packed sauce. Ingredients (Serves 4)
- 400g chicken breast
- 2 eggs, whisked
- 250g pad thai noodles
- 6-8 stems Chinese broccoli
- ¼ cup Spring onions
- 1 white onion
- 3-4 cloves garlic
- 1 tbsp soy sauce
- 2 tsp dark soy sauce
- 1 tbsp oyster sauce
- 2 tbsp + 1 tsp avocado oil
- 1 tbsp fresh lime juice
- To serve: Fresh lime juice Crushed peanuts
Method
- Prepare the ingredients – Cook the pad thai noodles according to package instructions, drain, and set aside. While the noodles cook, roughly chop the Chinese broccoli into bite-sized pieces, slice the white onion thinly, chop the spring onions, and mince the garlic.
- Marinate the chicken – In a bowl, mix the chicken with 1 tsp dark soy sauce, 1 tsp avocado oil, and 1 tbsp fresh lime juice. Set aside.
- Prepare the sauce – In a small bowl, combine 1 tbsp soy sauce, 1 tsp dark soy sauce, and 1 tbsp oyster sauce. Set aside.
- Cook the chicken – Heat 1 tbsp avocado oil in a wok or large pan over medium-high heat. Add the chicken in a single layer, cooking in batches if needed. Once golden and cooked through, remove from the pan.
- Sauté the vegetables – Add another 1 tbsp avocado oil to the same pan. Sauté the minced garlic for 30 seconds, stirring constantly, then add the sliced onion and cook until softened. Add the chopped Chinese broccoli and cook for 1 minute until slightly wilted.
- Cook the noodles – Add the cooked noodles to the pan and pour in the prepared sauce. Stir well to coat everything evenly. Let the noodles sear 2-3 times for about 40 seconds each without stirring so they absorb the flavors.
- Scramble the eggs – Move the noodles and veggies to one side of the pan. Pour the whisked eggs into the empty space and scramble until just set. Mix everything together.
- Finish the dish – Add the cooked chicken back to the pan, stir well, and cook for another minute. Remove from heat and squeeze over fresh lime juice.
- Serve – Garnish with spring onions, crushed peanuts, and additional lime juice if desired. Enjoy!
