These Pumpkin Granola Bars are the perfect blend of festive flavors and functional nutrition. Made with real pumpkin puree, warm spices, and crunchy oats, they're boosted with collagen for healthy joints, bones, and glowing skin. A delicious, grab-and-go snack that’s packed with fiber, protein, and the benefits of collagen—perfect for fueling your day!
Ingredients (makes 8)
- 2 cups rolled oats
- 1/2 cup pumpkin puree
- 1/3 cup honey
- 1 tsp pumpkin pie spice
- 2 scoops unflavored collagen
- 1 tsp vanilla extract
- 3 tbsp chia seeds
- 1/4 cup pumpkin seeds
- 1 cup milk of choice
- 1/2 cup chocolate chips
Method
- Preheat the oven to 160°C (320°F) and line a square baking dish with parchment paper.
- In a large mixing bowl, combine all ingredients except the chocolate chips. Stir well to combine.
- Pour the mixture into the prepared baking dish, then sprinkle the chocolate chips on top.
- Bake for 35-45 minutes, or until the edges are golden brown and the center is set.
