Salmon Bites with Rice and Broccoli


Enjoy a nutritious and flavourful meal with these Salmon Bites served alongside rice and steamed broccoli, drizzled with a tangy peanut dressing. This dish is quick to prepare, balanced in macros, and perfect for a wholesome lunch or dinner. Paired with a refreshing mixed berry collagen drink, it’s a satisfying way to fuel your day with both flavour and nourishment.

 

Ingredients:

  • 150g salmon fillet, cut into cubes
  • 1/2 tsp minced garlic
  • 2 tsp lemon juice
  • Salt and pepper, to taste
  • 1/2 head of broccoli, florets
  • 1/2 cup cooked rice, to serve
  • 1 scoop mixed berry collagen drink
  • 1 glass cold water

Peanut Dressing:

  • 1 tsp peanut butter
  • 1 tbsp sweet chili sauce
  • 1 tbsp lemon juice
  • 1/2 tsp minced garlic
  • 1 tsp soy sauce

Instructions:

  1. Add the salmon to a mixing bowl and season with garlic, lemon juice, salt, and pepper. Toss to combine.
  2. Add the salmon to the air fryer basket and air fry at 180°C for 6-8 minutes.
  3. Meanwhile, steam the broccoli and prepare the peanut dressing by whisking all the dressing ingredients together in a small bowl.
  4. Add the collagen to a glass of cold water and stir to dissolve.
  5. In a serving bowl, add the rice, steamed broccoli, and cooked salmon. Drizzle with the peanut sauce.
  6. Serve with the collagen drink and enjoy!
