Smashed Dumpling Tacos

 

Elevate your taco game with these Smashed Dumpling Tacos! Packed with flavourful chicken mince, fresh herbs, and a kick of chili, these tacos are perfect for a quick and delicious meal. Serve with a refreshing strawberry watermelon collagen drink for a tasty and nutritious pairing. 🌮🍉

Ingredients

(makes 8)

  • 500g chicken mince
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated (or ginger paste)
  • 2 tbsp chopped coriander
  • 2 tbsp chopped spring onions
  • ½ cup chopped chinese cabbage
  • 1 tbsp rice wine vinegar
  • 2 tbsp tamari
  • 1 tbsp sesame oil
  • 1 tsp chilli flakes
  • 8 mission mini tortillas

 

Serve with Collagen co strawberry watermelon collagen drink!

Optional: chilli oil, extra coriander, spring onions, sesame seeds for topping

 

Method

  1. In a bowl, add all the ingredients (minus the mini tortillas and collagen) and mix in a circular motion until well combined to create the dumpling mixture.
  2. Thinly layer the dumpling mixture onto the mini tortillas, pressing it into the base.
  3. Cook each wrap meat side down for 2-3 minutes until cooked, then grill the other side.
  4. Top with extra coriander, spring onions, sesame seeds, and a drizzle of chilli oil if desired.
