Ingredients (makes 6):
- 1 large chicken breast, thinly sliced
- 3 tbsp teriyaki sauce
- 6 rice paper sheets
- Toasted sesame seeds
- 1/2 avocado, thinly sliced
- 2 zucchinis, shredded into strips
- 2 medium carrots, shredded
- Extra teriyaki sauce, for serving
- Per serving: 1 scoop Purple Grape Collagen Powder + water
Method:
- Slice the chicken breast with scissors into thin pieces, then place in a bowl. Pour over the teriyaki sauce and toss to coat.
- Heat a small pan over medium heat and spray with oil. Add the chicken, cooking each side for about 2 minutes.
- Soak one rice paper sheet in cold water, then lay it on a damp chopping board for about 20 seconds, until it’s pliable but not overly soft.
- Sprinkle toasted sesame seeds in the center, then layer with 2-3 slices of avocado, zucchini, carrot, and 2 pieces of teriyaki chicken, leaving about an inch around the edges.
- Fold the bottom edge over the filling, then fold in the sides like a burrito, and roll it up. Repeat for each roll.
- Dissolve 1 scoop of grape collagen per person in a large glass of water and stir.
- Serve the rice paper rolls with the collagen drink and extra teriyaki sauce. Enjoy!
